WHAT you’ve never had a roasted tomato?
OMGOMGOMGOMG YOU’VE NEVER HAD A ROASTED TOMATO. Thank goodness you stumbled upon this post, because roasted tomatoes, are like, the new potato chip. Probably not. But when you’re watching what you eat already in preparation for that cute spring shirt you have that you try on every.year and every year you’re all like “ew my arms” and then toss it back onto the pile of clothes on your bedroom floor because you just don’t have the time to put it all away, then these are totally satisfying.

And can we say comfort food? I made these the other day because I needed some serious comforting. I am so borderline insane that I can only fall asleep with QVC on the TV. This is my new thing. It can’t be anything else.
And so, Mr. D finds this totally hysterical, and likes to change the channel after I fall asleep. But I KNOW. How sick is that? I KNOW when the TV gets changed while I’m sleeping. SLEEPING.
Wanna know why? Because then I have nightmares. Because Mr. D puts on that oh so addicting terrifying channel ID Discovery about all the unsolved murders/child killers and I literally can’t sleep if its on the TV. EVEN IF I’M ALREADY SLEEPING I instantly wake up. I am such a freak.

So I needed roasted tomatoes in my life. Because they are just so good and so comforting and so perfectly sort of healthy that I needed a big bowl of them to drown myself in while I cry of happiness.

Roasted Tomatoes ::
Whole or Grape/Cherry tomatoes
Olive Oil
Garlic Powder
Dried Basil
Dried Oregano 
Black Pepper
Pinch of salt
Cut your tomatoes into slices. If you’re using grape or cherry, just cut them in half. Lay them out flat, then drizzle on some olive oil. You don’t have to completely soak them (since we trying to make this more on the healthy side), but just enough where each tomatoes gets a little olive oil love. Then, sprinkle on your garlic powder, dried basil, dried oregano, and lastly, your black pepper and tiniest grain of salt.
This is where you have a choice. You can either use your oven, or, if you have a toaster oven, feel free to use that! That is actually what I always use since it is SO much more convenient. If using your oven, preheat to 325 before you slice the tomatoes.
Place the tomato slices flat on a sheet of foil, and then in they go for: Toaster oven:: 25 minutes, Oven:: 40 minutes.

They will be shriveled and delicious and your house will smell amazing. Feel free to eat them just like that or use for pizzas/pastas, anything else you can think of.

  1. These are bombdiggity! I have been making these for weeks now!

    My beau is not a fan, but my daughter and I can just eat them up!

    Her fave is pasta tossed in butter, some Arugula and a bunch of these babies mixed in!
