Asparagus & Prosciutto Puff Pastry Swirls



Oh my goodness, goodness gracious. I don’t even know where to begin with these things. I think they might have changed Mr. D’s life and I’m not even kidding. In fact, I’m definitely not kidding. They so changed his life.
Ya see.. last week I had a fashion event to attend. And when you attend fashion events, you must always end the night off with dinner and drinks at a really cute restaurant. Its like, the law. And if you don’t.. then well.. you’re doing it wrong. Or maybe you have a few sweet babies running around at home and then thats totally acceptable.

God, I am so not having kids for a long time.

Anyway – rewind to last Thursday night – Mr. D and I stopped in to one of our favorite “after work” places in NYC, Pazza Notte. We happened to tell the bartender to just “surprise us” with whatever pick for an appetizer (which hey, p.s, I never normally do since I’m so paranoid at life, but, did I mention this place has 2 for 1 martinis?). Needless to say since you probably already guessed the ending to this obnoxious story – these ended up being the appetizer she brought over for us.

I’ve never seen Mr. D eat something so fast in my life, so that.. my friends.. was my cue to go out and  recreate those little suckers.

Here you go.

Asparagus & Prosciutto Puff Pastry Swirls
1/4lb Prosciutto
1 Sheet of frozen Puff Pastry (that has been thawed)
1/2 Bundle of Fresh Asparagus
2 T Water
Pinch of Salt & Pepper
Preheat your oven to 400.
Cut the ends off of your fresh asparagus spears, and add them to a microwave safe dish with a lid, as well as your 2 tablespoons of water. Steam in the microwave for 4 minutes.
While asparagus is steaming, cut your puff pastry sheet into 1 inch strips using a pizza cutter and set aside. Pull apart your pieces of prosciutto and cut into smaller slices if necessary.
When asparagus is done steaming, toss with salt and pepper. Take a piece of prosciutto and fold ends in in order to fit on a strip of puff pastry. Wrap your prosciutto lined puff pastry around a spear of asparagus and set on a greased cookie sheet. Continue until you wrap up all remaining asparagus.
Bake in the oven for 15 minutes or until puff pastry if puffy and golden. Enjoy!
