Lemon Scallion Rice

Random fact: this rice is probably one of my most favorite things to eat with grilled chicken. That holds no relevance to why I’m sharing it with you today, but, I thought you should know.

You may be familiar with Chipotles extremely amazing Cilantro Lime rice, and well, this is pretty much just a different take on that. Because you guys know I can never keep anything the way its supposed to be. I always have to go around changin’ things. Would you expect anything more from me?

I’m like a child.

If you luvz the Chipotle version, I highly urge you to try this one out. It might change your life, you may never look back, but thats ok. 

P.S I really love it with grilled chicken.
Lemon + Scallion Rice

Make 1 serving or 2 sides
1 cup white rice
1/2 a lemon, juiced
3 tablespoons scallions
2 tablespoons vegetable oil
1/2 teaspoon salt

Cook your white rice according to the package. You can very easily substitute for brown rice, but for the sake of copying Chipotles recipe, I use white. When your rice is cooked, fluff and let sit undisturbed for a few minutes.

In a bowl, add your rice, lemon juice, scallions, oil and salt. Toss to coat completely.

Transfer to a serving plate and enjoy!
