There is nothing we love more than creating super delicious, copycat meals at home for cheap! After all, we’d prefer to dump all of our money in shoes and cocktails, so keeping lunch and dinner costs to a minimum helps us do that!
Did you know that a packet of Ramen Noodles costs less than $1? $0.67 to be exact (or at least in NYC)! With the addition to a few other ingredients, this dish comes together for just under $5.00, and will feed two! You may even be able to get away with it coming out to cheaper, depending on where you live. Here in NYC, everything is a tad bit more expensive. 🙂
$5 Chinese Noodle Vegetable Stir-fry
2 3oz packs of Top Ramen Noodles (we used the chicken flavor, reserved 1 of the packets and tossed the other.)
1 cup of frozen vegetables of choice (we used a carrot, broccoli, and cauliflower mix!)
1 teaspoon butter
1/2 cup soy sauce
1/2 of the seasoning pack that comes with your noodles
1/2 teaspoon red pepper flakes
1/2 teaspoon brown sugar
1/2 teaspoon garlic powder
Cook your frozen veggies according to the package and set aside. Boil a pot of water on medium heat and cook your noodles until done, about 3 minutes. Drain and set aside.
Melt butter in a skillet on medium-high heat, and then add in your noodles. Toss and allow to crisp up a bit. While noodles are crisping, combined soy sauce, 1/2 of your seasoning packet, red pepper, brown sugar and garlic powder. Whisk until sugar is dissolved, then pour onto crisping noodles. Toss to fully coat, then add in your cooked vegetables.
Give everything a quick flip, and divide into two servings and enjoy!
