Crispy BBQ Chicken Salad

Do you ever have one of those days when you have little-to-no time to think about what’s for dinner, let alone actually prepare something? You stare aimlessly into your fridge, and then ponder where you put the take-out menus? Of course you do, since you’re a beautiful person, with beautiful person things going on. Ain’t nobody got time to think about what’s for dinner.
Even when I have no idea what to whip up, I try my hardest not to turn to take-out. When you’re hungry and have no time, it’s so easy to over order; which turns into overeating. No thanks!
This salad is one of my go-to meals to make when I’m running around and have to be out of the house pronto. It takes about 15-20 minutes to prepare, and will leave you feeling full and satisfied! Plus, hello crispy, healthy chicken!
Crispy BBQ Chicken Salad

for the chicken:
1 boneless, skinless chicken breast
1 tablespoon lemon juice
1/2 cup corn flakes
1 teaspoon garlic powder
1 teaspoon dried parsley flakesย 
salt & pepper for seasoning

for the salad:
2 cups salad mix of choice (we used an iceberg mix to add an extra crunch factor!)
2 teaspoons lemon juice
BBQ Sauce of choice
green onion for garnish

To prepare the chicken, preheat your oven to 400 degrees and season both sides of the breast with salt and pepper. Add cornflakes to a ziploc bag and crush until fine. You can also do this in a food processor, but who wants to clean a food processor? Add the garlic powder and parsley flakes to the “breadcrumbs” and toss to combined. Drizzle 1 tablespoon of lemon juice onto both sides of your chicken, then dip in the cornflake mixture. Be sure to coat both sides completely, pressing the flakes into the chicken to ensure they stick.

Add chicken breast to a greased or lined baking sheet, spritz with a little cooking spray, and cook in the oven for 10 minutes. Flip and cook for an additional 3-5 minutes, or until chicken is cooked through. While chicken is in the oven, prepare your salad by adding the mix to a bowl and topping it with the lemon juice and garnish. Toss to combined.

Slice cooked chicken intro strips and add them to the salad. Top with your favorite BBQ sauce and enjoy!
