Vegetable Lo Mein (in ginger sauce)

We have an announcement! We’re renaming this blog Noodles and the City! Welcome to our new domain! Just kidding, but would you really be surprised?

The answer to that is no. No, you would not.

You know we take our noodle (and pizza!) eating very seriously around here, so we had to throw up a new lo mein recipe, jam packed with our favorite stir-fry veggies and this amazing ginger sauce!

You won’t want to eat anything else!

Vegetable Lo Mein (in ginger sauce)

1lb Lo Mein Noodles (cooked)
1 1/2 – 2 cups Mixed stir-fry vegetables (broccoli, carrots, onions, scallions, snow peas)
1 teaspoon sesame oil

Ginger Sauce:
1/2 cup Soy Sauce
1 teaspoon Sugar
2 Garlic cloves, minced
1 small piece of Ginger, minced
1/2 teaspoon Lemon Juice
1/2 teaspoon Sesame Oil

Prepare lo mein noodles according to the package and set aside. If using pre-made noodles, add them to a colander and rinse under cold water until they come apart. Set aside.

Add 1 teaspoon of sesame oil to a wok or skillet on medium high heat. Add your vegetables and stir-fry until tender, about 4-5 minutes. While the veggies are cooking, whisk together all of the ingredients for the ginger sauce until sugar is dissolved and everything is incorporated.

After 4-5 minutes, add noodles to the skillet along with the sauce. Toss to coat everything and cook for an additional minute or two. Enjoy!
