It’s baccccccck! Nope, not your crazy ex. Asparagus! Asparagus is back!
As promised, here is recipe numero deux to cook up asparagus in a not-so-everyday-boring way! Unlike yesterdays crispy-lemony version, today we’re working with nuts, spice everything nice!
Spicy Thai Chili Garlic Asparagus with Peanuts
1/2 lb Asparagus (We used 1/2 of a 1lb bag of the frozen stuff)
1 teaspoon Sesame Oil
1 tablespoon Spicy Chili Garlic Sauce (found in the Asian isle of the supermarket)
A handful of peanuts (this measurement is completely optional)
Thaw your frozen asparagus on the counter for 10 minutes, or if using the fresh stuff, wash and trim the ends. Heat the sesame oil in a skillet on medium heat, then add in the spears. Toss with chili garlic sauce, throw in peanuts. Toss everything together and saute for 4-5 minutes. Note: if you are using fresh asparagus, add an additional 2-3 minutes to saute time or until vegetable starts to brown and is cooked through.
Transfer to a serving plate and enjoy!
