Mixed Grain Salad With Chopped Lemon Chicken

If it’s one thing that’s been pretty difficult for me lately, it’s trying to stay on track with a healthy diet. It’s almost as if I was stretching out the winter days for as long as I could to use it as an excuse to indulge in the things I shouldn’t take a second look at. I’m talking to you, bacon-wrapped pizza. (Yes it’s a thing, btw)
These days, I’ve been jumping on the grain bandwagon, and giving my body some of that nutrition it needs. Not all carbs are bad, you guys. Brown rice, wild rice, they are all good in moderation. Top it with some lean protein, like we did here today, and you’ve got yourself a pretty dang healthy meal.
For todays post, and in collaboration with PAM, we’re bringing you this mixed grain salad topped with lemony grilled chicken. If that doesn’t scream spring then I don’t know what will. Plus, because we love how easy the clean up is when using PAM vs. oil, this is a super quick meal to tidy up. Bonus!

Mixed Grain Chopped Lemon Chicken Salad
serves 2
1/4 cup brown rice
1/4 cup wild rice
1/4 cup quinoa
1 cup water
2 boneless, skinless chicken breast (pounded slightly for uniform thickness)
1/3 cup lemon juice
salt & pepper to taste
PAM non-stick spray

Place chicken breasts, salt/pepper and lemon juice in a ziploc bag and allow chicken to marinate for 1 hour or until ready to use.

Add 1 cup of water to a saucepan on medium-high heat and add in your 3 grains. Be sure to rinse quinoa beforehand to remove any bitterness. Cover, and bring this to a boil. Once boiled, lower the flame and allow to simmer for 10-15 minutes. 

While grains are simmering, heat a grill pan that has been generously coated with PAM Grill and grill your chicken breasts for 4-5 minutes on each side, or until cooked through and no longer pink in the center. Transfer breasts to a place and allow them to rest for 5 minutes before chopping on.

Add your mixed grains to a serving plate and top with the chopped chicken. Drizzle on some additional lemon juice if you’d like and enjoy!
