With the weather consistently getting warmer and warmer, all I have is BBQ on my mind. Well, to be honest, I have BBQ on my mind even in the depths of winter. Who doesn’t have BBQ on their mind at all times? I can’t trust those people.
This was one of those “fridge clean out” meals that was thrown together on a whim and ended up working out really well. Aren’t those the best? Not only are you preventing waste, you sort of realize you’re a genius.
And anything that makes me feel like a genius, and includes BBQ, is something I hold very dear to me heart.
BBQ Chopped Chicken Couscous Salad
1 entree size or 2 smaller servings:
1 cup couscous
1/2 cup cooked chicken, chopped (i used a leftover grilled chicken breast)
1/3 cup onion, chipped
1/2 teaspoon olive oil
1 1/2 tablespoons BBQ sauce
In a sauce pan on medium-high heat, bring 1 cup of water to a boil. Add in your dry couscous and immediately remove from flame. Allow couscous to absorb water for 10-15 minutes or until you can fluff it without any water remaining.
While couscous is cooking, heat 1/2 teaspoon of olive oil in a saute pan and cook onions for 4-5 minutes or until translucent.
Combined cooked couscous, onions, chopped chicken and top it all with your favorite BBQ sauce and enjoy!
