Easy Chocolate Chip Cookies

Before we get started, let it be known that the title of this post does not reflect the actual quality of these cookies. Just because they are easy, does not mean they are basic. They are, however, the perfect everyday cookie recipe for when you just need a taste of the OG of cooke genre. The good ol’ choco chip. The captain of the cookie ship. The savior of PMS across the land. The supre- I’m going to stop now.
For a long time I was afraid to make cookies from scratch. I have no idea as to why, or no past horrific experience with trying that led me to be so fearful. Sometimes I don’t make sense. But sometimes I do, and that’s when I make cookies.
The universe would be really happy if you made some chocolate chip cookies today.

Chocolate Chip Cookies

makes 1 dozen  (one is missing from the photos because I can’t be controlled and kept eating the dough)
1/3 cup softened butter
1/3 cup brown sugar, packed
2 tablespoons white sugar
2 1/2 tablespoons vanilla extract
1/2 teaspoon baking soda
3/4 cup all purpose flour (I actually used whole wheat!)
1 egg yolk
1/2 cup chocolate chips (or more if you’re crazy like me)

In a large mixing bowl, combined softened butter, both sugars, and vanilla extract. Crack in your egg, then stir until combined. Carefully add in your flour and baking soda, and mix well. Your dough should start to form, and at this point, knead in your chocolate chips. Roll and pat into a ball, then transfer to a tupperware or other airtight container to keep in the fridge overnight.

To bake, preheat your oven to 325, then roll the dough into tiny balls with the palms of your hand and bake for 10-12 minutes. Let stand for 5 minutes on the baking sheet to firm up after you remove them from the oven. Enjoy!
