Not only is it filling, and shocker – good for you (!), it’s extremely easy to make, and stores well in the fridge for #mealprepmondays. Try this out and you’ll never go back to traditional fried rice again.
Quinoa Fried “Rice”
1 cup cooked quinoa
1 large chicken breast, cooked and cubed
1/2 cup steamed broccoli
1/2 white onion, chopped
2 whole eggs
2 tablespoons low-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon sesame seeds
freshly ground black pepper + salt to taste
Have your cooked quinoa, broccoli and cubed chicken ready to go, as this process moves fairly quickly. Heat 1 teaspoon sesame oil in a skillet on medium heat and cook onion until translucent, about 4 minutes. Crack in your eggs and give them a good scramble. Toss the egg with the onion to combined. Sprinkle on some freshly ground black pepper and sea salt, then add in your cooked quinoa followed by the chicken and broccoli. Toss everything together then pour in your soy sauce. Saute and fry the “rice” for a few minutes until crisp. Sprinkle on some sesame seeds and enjoy!
