Honestly, and I’m only looking for an honest answer here, who the f*ck doesn’t like guacamole?? It’s a bowl of mashed avocado with an endless option arsenal of add ons. Make it spicy, make it sweet, make it for breakfast, lunch, and dinner — I don’t care — just make it all the time and force it into the faces of those cruel human beings who don’t like it.
If you haven’t heard — and let’s be real, you heard — tomorrow is Cinco de Mayo. I have a love/hate relationship with this holiday, because in actuality, it’s not even Mexico’s real independence day. That happens on September 16th, my friends, and I just gave you another day to mark down in your calendar as a totally acceptable date to start drinking margaritas the moment you wake up.
But on the real, us everyday, uninformed, sheeple of Americans will still celebrate Cinco de May for what it has transformed into — a day chock full of tacos, tequila, and a fuck ton of guacamole.
Fire Roasted Guacamole
1 can diced tomatoes & green chilies, drained (I used the RO*TEL fire roasted variety)
1/2 cup chopped onion
1 tablespoon lime juice
1/2 teaspoon salt
Black pepper to taste
Mash up avocados in a bowl and then add in all of the remaining ingredients. Serve with a side of chips or veggies and enjoy!
