Chicken & Onion Cheesy Crusty Bread

If it’s one thing I’m certain of, it’s that cheesy bread will always be a crowd pleaser. Whether you’re making it for a party, for your kids, or even just for yourself – the options are truly endless in customizing it to satisfy your taste.
I had a friend over for a bottle of wine last weekend, (errrm yes.. 1 bottle.. 2 of us) and when I thought about what finger food I’d put out to serve along side, nothing seemed more attractive than some cheesy bread. It’s no secret that cheese and wine go together like the good ol’ sun and the sky, especially when paired with a good pinot noir and your bestest gal pal of em’ all.

Aside from impromptu pow-wows at home, this recipe would also serve as a great idea to bring to all of those summer BBQ’s I’m sure your inbox is being flooded with! Because at the end of the day, who the hellย doesn’tย freaking loveย melted cheese on top of some crusty bread?

Chicken and Onion Cheesy Bread
1 baguette
1/2 cup Grand Cru Original cheese
1 boneless, skinless chicken breast
1 whole white onion, thinly sliced
2 tablespoons Olive Oil
1/2 teaspoon Sugar
Salt & Pepper to taste
To start, heat 1 tablespoon of olive oil in a saute pan on medium high heat until oil is shimmering. Add in the onions, and spread out evenly over the pan to begin the caramelization process. Allow to cook for 10 minutes, stirring occasionally, then add in 1/2 a teaspoon of sugar. Toss the onions to coat, and allow to brown up and caramelize for 35-40 minutes longer. Be sure to scrape at the bottom of the pan to prevent onions from sticking. Remove from heat and set aside.

While onions are caramelizing, use this time to cook your chicken. Sprinkle salt & pepper on both sides of the breast, and grill on a grill pan for 4-5 minutes on each side or until chicken is cooked through and no longer pink in the center.
Preheat your oven to 425 degrees fahrenheit, and line a baking sheet with tinfoil. Slice open your baguette and pour on 1/2 a tablespoon of olive oil to each side, then sprinkle with half of the Grand Cru Original cheese. Top each side with even amounts of chopped chicken and caramelized onions. Sprinkle on remaining cheese, and pop in the oven for 10-15 minutes, or until cheese is melted and bubbly.
Slice in squares and let the munching begin!
